- 4 ounces butter-unsalted
- 8.8 ounces bittersweet chocolate
- 1/4 cup un-sweetened cocoa powder, less 1 tablespoon
- 2 1/2 ounces sugar
- 4 whole eggs
- in a double boiler–melt chocolate, butter and cocoa powder. set aside to cool
- whisk 1/2 of the sugar into the egg yolks. mix egg yolks and sugar into the chocolate mixture.
- in a clean bowl, whip egg whites to stiff peaks slowly adding the remaining sugar.
- gently fold whipped egg whites into the chocolate mixture
- butter baby ramekins (2″ or 3″)and fill batter 3/4 way to the top.
- bake at 425 for about 8 minutes. if you like a gooey center they will be done in 8 minutes–if you like a more solid cake bake 10 minutes.
- dust with powdered sugar
- serve warm with ice cream on the side!
- makes 6 individual 3″soufflés or 8 individual 2″ soufflés
