gluten free superbowl party–no one will EVER know!

In Chicago we aren’t so psyched for the Superbowl this year–our beloved Bears are out, so who really cares?   My husband and kids still care!  They like the food and excitement which goes along with watching any activity involving a ball.  Of course it would be much more fun if the Bears were playing. But they are not and my people still have to eat!

By nature our Superbowl party in gluten free.  I am not sure why it is so difficult and confusing for everyone to go this route. Who doesn’t feel better not being bloated by the evils of wheat???

This menu is as traditional as Thanksgiving turkey, stuffing and apple pie–it all goes together perfectly.

appetizers:

individual crudities:
to eliminate the dreaded double dipping use individual shot glasses of ranch dressing, hummus or red pepper dip- stick in three -five pieces of  sliced carrot, celery and red pepper strips

Use Udi’s bagels. Brush each bagel with olive oil, top with your favorite pizza sauce, shredded mozzarella cheese and season with Italian Seasoning or Oregano.  Bake 10 minutes on 350 and cut into quarters.

Nachos with guacamole, chili and cheese:

Use triangle shape corn tortillas chips- top with 1 Tablespoon chili and shredded cheddar cheese, place under broiler for 3 minute until cheese is melted.  Take from oven and add and a teaspoon of guacamole and a little drop of sour cream.
