Some meringue cookies are disgusting—The gross ones have a kind of a chalk like appearance and teeth grinding chew for the texture. The following recipe makes a chewy meringue—crunchy on the outside and chewy on the inside.    You can omit the cocoa powder and make a white meringue with chocolate chips inside. OR  add green food coloring and  a  bit of peppermint extract to make chocolate mint meringues-

either use mini chocolate chips or chopped up semi sweet chocolate chunks–i use which ever i have in the house.
to make a mint version–omit cocoa powder and add green coloring and 1/8 teaspoon peppermint extract.

Sometimes I add chocolate sprinkles to the top before baking.
